Comparing Knife Handle Materials
Three months ago I pulled a riveted polymer handle off a chef's knife I'd owned since 2019. The blade was fine. The scales had cracked where they met the tang. So I started paying real attention to handle materials, the way the pros do, and the way most home cooks never do. What I found is that the handle matters at least as much as the steel once you put in real hours.

How I tested

POM: the indestructible no-nonsense pick
POM is polyoxymethylene, a high-density engineered plastic. You'll see it on most mid-tier Japanese knives and a lot of Western mid-tier forged sets. It looks unremarkable. It feels like what it is. But it doesn't fail.
The first chef's knife I ever owned with a POM handle was a Santoku I bought in 2017. I still have it. The blade has been sharpened down twice. The handle is exactly as it was the day I bought it. No cracks. No wobble at the rivet. No fading.
Owner reports echo this across hundreds of knives. One owner who has had the same POM-handled gyuto for 7 years wrote that the handle "looks and feels new" and that they've never thought about replacing it. Stainless steel (full tang): bulletproof but heavy
Stainless steel handles are usually part of a full-tang construction: the blade steel runs the entire length of the handle and is sandwiched by two scales. On premium German sets and a lot of Japanese Western-handle knives, those scales are also stainless. The handle is essentially a solid block of metal shaped to fit your hand.
I ran a full-tang stainless chef's knife for two years of catering prep. It was the most durable knife I owned. The handle was indestructible. It could sit in a sink overnight and show no damage. I once left it on the back patio in the rain for 36 hours. Still no rust spots, no pitting.
Where stainless loses is weight and grip. On a 8-inch chef's knife with a full stainless handle, you're looking at 9–10 ounces total. After 200 cuts, that weight adds up. And stainless is slick. When my hands were wet or covered in chicken fat, I had to grip harder than I wanted to. The stamped ridges on the handle helped, but not enough.

Stamped polymer: the budget failure mode
Stamped polymer handles are what you get on entry-level knife sets, typically under $30 for the whole block. They're molded plastic, usually attached to a stamped blade with rivets or a single tang insert.
I've owned two stamped polymer sets and one stamped handle on a forged blade that failed within 6 months. The pattern is the same. The handle develops a wobble at the rivet. Then a hairline crack appears where the plastic meets the tang. Then the rivet pulls through.
One owner of a Cuisinart Classic Forged set reported exactly this: the paring knife handle "cracked from the rivet to the edge after about six weeks of hand-washing and proper care." I've seen the same complaint on Wüsthof entry-level sets and a handful of Henckels International models. The stamped polymer handle is the part that fails first, almost every time.

Wood (natural): pretty and high-maintenance
Natural wood handles look great and require real care. They need to be oiled monthly, dried immediately after washing, and never left wet overnight. In return, you get a handle that's warm, balanced, and quiet in the hand.
I owned a set with natural rosewood handles for three years. The handles looked beautiful. They also cracked at the butt end after about 18 months because I didn't oil them religiously. The blade was fine. The handles went in the bin.
For someone willing to oil their handles every month, natural wood is honest and good. For most home cooks who forget, it's a maintenance trap. Pakkawood gives you 90 percent of the look for 10 percent of the work.
The grip factor nobody talks about
Here's what the spec sheets don't tell you. A handle can be made of the best material in the world and still be wrong for your hand. The bad news is that stamped polymer handles almost always come in one generic shape, because the maker isn't paying a handle designer to think about it.
Which handle material should you buy?
If you're buying a daily chef's knife, buy pakkawood or POM. Both will outlast the blade steel. If you're buying a paring knife, POM is lighter and won't get slippery mid-cut. If you're buying a heavy blade for butchering, stainless is fine because the weight helps the cuts and the slicks don't matter. Avoid stamped polymer if you're cooking more than twice a week.
Cost-per-day on my pakkawood chef's knife is about 8 cents a day over 4 years. That math makes me feel a lot better about the $130 I spent on it.
